The ashing balances the natural acidity of the goat’s milk, creating a smooth, mellow flavour with a hint of earthiness.

Its striking appearance and refined taste make it a standout on any cheeseboard, paring beautifully with crisp white wines or a

glass of sparkling wine.

Description

Long before refrigeration, cheesemakers discovered the art of coating young cheeses in ash to preserve the life of the cheese.

Grapevine ash http://www.thespruceeats.com is alkaline, it will protect the inner delicate cheese from air exposure, and also absorb moisture from the inner cheese.

Today, we honour that tradition with our handmade goat’s cheese, dusted in fine ash from local organic grapevines.

We gather the pruning and burn to crisp, then roll with a rolling pin and blend to a fine dust, all by hand !  Lastly, we sprinkle the freshly

made goat’s cheese with ash through a tea-strainer.

The ash gently neutralises acidity, softening the natural tang of the goats’ milk and allowing a silky, creamy texture to shine through.  Each log

is a marriage of local milk and grapevines produced by local artisans – cheesemaker and the wine-maker – an elegance that pairs

beautifully with crisp wines, sparkling wines or a dizzle of honey.

This cheese is as much about heritage as it is about flavour: a striking centrepiece for the table, and a nod to the timeless marriage of cheese and

wine in our Hunter Valley Region.
